Vegetarian Power Bowl

Holy smokes you guys HAVE to try this! I am all about making healthy food that tastes amazing and my husband will eat! This power bowl is where its at, lots of fresh ingredients, good for the body, easy to digests and full of nutrients, oh and super quick and easy to make which is always a win in my book!

Heres the details!

  • Prep Time: 15mins
  • Cook Time: 30-40mins
  • Yield: 2-4


  • 3 large tri-colored carrots
  • 1 medium zucchini
  • ¼ cup fresh basil, cut into ribbons
  • 1 can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Generous sprinkling salt and pepper

The How To: Preheat oven to 400 degrees. Lay your drained and rinsed chickpeas on a baking sheet, pat dry with a paper towel, coat in olive oil, cumin, chili powder, salt and pepper. Put the chickpeas in the over for 20-30 mins shaking them occasionally to avoid burning the bottoms. You can make the chickpeas as crunchy or soft as you would like but keep in mind if you refrigerate them or leave them out too long they will lose their crispiness. After you put the chickpeas in the oven, spiralize your carrots and zucchini, put in the refrigerator to keep cool while you wait for the chickpeas. Now make your green goddess dressing!

Green Goddess Dressing Recipe


  • 1 large avocado
  • 1 cup parsley
  • 1 cup cilantro
  • 2 cloves of garlic
  • 1-2 limes juiced (Up to you how acidic you want it, I used 2)
  • 1/2 cup water
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 cup pistachios (You can sub other nuts or even omit this if you have an allergy)

The How To: Take all your ingredients EXCEPT pistachios and put it all in a food processor (or blender). Blend until smooth and creamy, then add the pistachios and blend as much or as little as you’d like, I like a little more texture to mine so I just gave it a quick puree, put it in the fridge for a few minutes to cool. Dress your carrots and zucchini with the chickpeas, the green goddess dressing and enjoy!
